Panela, a sort of half-product in the production of sugar, is quickly gaining popularity as a sugar replacement because it is a purely organic sweetener. Where in the production of sugar calcium oxide and sulfur dioxide are used, in the production of panela the juice from the sugar cane is cooked without any additives. The sugar cane itself is used as fuel for the ovens that cook the juice at high temperatures, after which it is quickly cooled down and packed and sold in the form of bars or powder. The sugar cane farms usually have their own plant where the panela is produced, so the revenues go directly to the farmers.
